Coleslaw seems to be one of those very polarizing side dishes. People either love it or hate it. I personally used to hate it - and I'm not sure why. It's really all the things I love - mayo (love). cabbage (love). vinegar (love). So, I put myself through coleslaw training and did recipe testing and came up with this semi-lightened up version that will be sure to tantalize your tastebuds (yes, I just said that). It's tangy, a little creamy, and has the perfect amount of crunch.
-12 oz bag Trader Joe's shredded organic broccoli slaw (or any other pre-packaged broccoli slaw you can find - and don't worry about organic. that's a nice to have)
-1/2 10oz bag Trader Joe's shredded green cabbage (same note as above - doesn't have to be Trader Joe's)
-1/2 cup 2% or full fat plain greek yogurt
-1 TBS real mayonnaise (Dukes, Hellmann's, whatever - just make sure it isn't low fat)
-2 TBS apple cider vinegar
-2 TBS red wine vinegar
-2 tsp sugar
-1 tsp dijon mustard
-1 tsp celery seed
-pinch of salt
-pinch of black pepper
Combine all dressing ingredients into a large bowl and whisk well. Dump your shredded items on top of the dressing and toss well. Taste once everything is well coated. Does it taste like it needs something? Adjust seasoning to your liking! The trick is to slowly add a little bit more of one thing, stir well, taste, and then see if it needs anything else. Don't dump a whole bunch of additional ingredients on there and then taste. Remember folks - you can always add more but you can't take away!
