Broccoli & Kale Power Salad

This salad is a real winner. The broccoli and kale are massaged in a tangy Asian dressing that will knock your socks off. The salad is then topped with avocado, sunflower seeds, and red pepper flakes. It's easy to make and super filling - and packs a real healthy punch!



Serves: 1

Double, triple or quadruple if making for a crowd or for the week. Just be sure to keep the dressing and salad separate until you're ready to serve. And don't cut up the avocado until you're ready to serve either!


Ingredients:

DRESSING:

1 tsp sesame oil

1 tsp tamari or soy sauce

1/2 tsp olive oil

1 TBS white distilled vinegar

1 clove minced garlic or 1/2 tsp garlic powder



VEGGIES:

1 cup broccoli florets

2 handfuls of massaged kale


TOPPINGS:

Sunflower seeds or crushed cashews or any nut you like, crushed

Red pepper flakes

1/4 of an avocado cubed


Instructions:

Combine all dressing ingredients into a large bowl. Whisk well.


Massage the kale well. Add the broccoli and kale to the bowl with the dressing. Gets your hands in there and massage the broccoli and kale well with the dressing. Don't be afraid to get a little messy!


Top with sunflower seeds or nuts, avocado, crushed red pepper flakes and enjoy!
