Garbage Tomatoes
Looking for an easy and versatile dish? I've got you covered. Once upon a time I had some tomatoes that were about to go bad and I created what I call garbage tomatoes. Tomatoes, olive oil, salt, pepper and garlic powder are the only ingredients in these bad boys - and you can use them a million different ways! Serve them on pasta. Or as a side with steak. Or mixed in with other veggies. Or as an antipasta. Or with cheese and crackers. Or as a healthy snack. You do you, with one of my fave creations!

Serves: TBD - depending on how you use these!
Ingredients:

1lb cherry, grape or mini-heirloom tomatoes poked with either a fork or a small slit with a knife (to prevent tomato explosion in the oven)
3 TBS olive oil
Kosher salt
Pepper
Garlic powder

Pre-heat oven to 400. Spray a baking sheet with cooking spray. Place tomatoes on baking sheet and drizzle with olive oil. Season with salt, pepper and garlic powder. Don’t be afraid to be heavy handed. You want these puppies to be salty, sweet and garlicky. A real flavor bomb. Place in oven for 30-45 minutes, occasionally mixing the tomatoes by shaking the baking sheet or mixing gently with a wooden spoon. Tomatoes are done when liquid is gone and there is a slight char on tomatoes and bottom of baking sheet. SLIGHT CHAR PEOPLE, not burnt all the way! Remove from oven and immediately scrape pan with plastic spatula to get all the good bits up from bottom of baking sheet. Serve warm or allow to cool and eat anyway you want.
