Lemon Caper Cod with Garlicky Cauliflower and Artichoke Hearts
You guys! This easy sheet pan meal will change your life - and impress your guests or family! This meal comes together quickly and has minimal active time. The saltiness of the capers paired with the citrus tang of the lemon is out of this world!

4 cod fillets
1 large head of cauliflower, florets only
14 oz can artichoke hearts, drained
1 large shallot, minced
3 heaping TBS capers
3 TBS minced garlic
2 TBS butter,
1 lemon, sliced into thin rounds for a total of 8 thin slices
2 TBS olive oil, separated
2 tsp garlic powder Tin foil
Preheat oven to 400.
Coat a large baking sheet with 1 TBS olive oil. Arrange cauliflower on baking sheet and drizzle with 1/2 TBS olive oil. Season with salt, pepper and 2 tsp garlic powder. Toss together well. Add shallots and 1 heaping TBS of capers and toss together again.
Line the artichoke hearts face up on the baking sheet next to the cauliflower. Top the hearts with minced garlic, using a total of 1 TBS of garlic for all of the hearts. Do not toss.
Place the cauliflower and artichokes in the oven and set the timer for 15 minutes.
Meanwhile, create 4 separate foil rectangles, large enough to completely cover each piece of cod when folded. Place the fillets on their separate foil pieces and season both sides of the cod with salt and pepper. Take the 2 TBS of butter and separate into 8 pats of butter. Top each fillet with two pats of butter - one towards the top of the fillet, and the other towards the bottom. Then evenly distribute the remaining 2 TBS of capers and 2 TBS of garlic across each fillet, lining the capers and garlic down the middle of the fillets. Top with two lemon slices on each fillet. Wrap the foil ends of the top of the cod to completely enclose the cod, but DO NOT wrap the cod too tight, or too close. You want to leave some space so the juices from the sauce you're creating have room to permeate the packet you have created.
Remove the cauliflower and artichokes from the oven after 15 minutes. If there is room, place the cod packets onto the baking sheet. If not, I'm sorry, but you need to get out another baking sheet. Or you can be brave and place the packets directly on the oven rack, but I don't recommend that. Bake the cod for about 10 minutes. Cod cooks FAST. DO NOT OVERCOOK THE COD!
After 10 minutes, check the cod. It should be fully cooked through and flaky.
Remove the cod fillets from the oven and set aside. Turn your oven to a high broil. Allow artichokes and cauliflower to broil for 2-4 mins to get a nice charr on them. Remove from the oven. Marvel at their beauty.
Remove fillets from packets, place on plates and serve with cauliflower and artichoke hearts.
