Mexican Kale Caesar Salad
I'm obsessed with Chop't (specialty salad store), but buying lunch every day can be a real waste of money. I've re-created my favorite - the Mexican Caesar - at home. It's spicy, tangy, creamy and delicious. The great thing is that for the price of one salad from Chop't, I can buy all of the ingredients at the store that will make 5 salads for the week!
double, triple or quadruple if making for a crowd, or if making for lunch for the week. Just keep the dressing separate from the lettuce until ready to serve!
D R E S S I N G:
1 TBS plain Greek yogurt
1 tsp mayo
1 - 2 tsp hot sauce, I used @cholulahotsauce
1/2 tsp garlic powder
1 TBS fresh lime juice
1 tsp course salt
A pinch of black pepper
1 tsp olive oil
S A L A D:
3 large handfuls of lettuce of your choice, I used Italian kale from Trader Joe's
1/2 avocado cubes
2 TBS cotija cheese
1/2 jalapeño de-seeded and sliced
optional: crumbled tortilla chips, grilled chicken strips
Combine all dressing ingredients in a bowl and whisk well until creamy dressing forms before your eyes. Set aside. Place lettuce in a large bowl and if using kale massage with your hands to break down the toughness of the kale.
Drizzle dressing over salad and toss well. Take half of the toppings and sprinkle onto salad. Toss again. Top with remaining toppings and eat your affordable and delicious salad. Tip: if packing this for work keep dressing and tortilla chips separate from salad until ready to eat . . .
