Oniony Chicken Salad

I've created a lightened up version of chicken salad that IS SO GOOD. I'm not kidding. I've been told that this chicken salad is better than most other chicken salads - and guess what. I'm pretty proud of that. Using mostly plain Greek yogurt instead of mayonnaise, this salad packs a protein punch - and I promise you - flavor is not compromised. This is the perfect dish to make for playdate lunches - as you can see pictured below. Moms go wild for chicken salad. At least the moms that I know. Without further ado - I give you Chicken Salad.

Serves: 4 (or 2 really hungry moms)


-2 finely diced chicken breasts (I used two chicken breasts from a Whole Foods Naked Rotisserie Chicken. I swear, rotisserie chicken makes the best damn chicken salad)

-1 cup finely diced sweet onion

-1/2 cup 2% or full-fat plain Greek yogurt

-2 tsp full-fat mayonnaise

-1/4 tsp salt

-1/4 tsp black pepper

-1/2 tsp garlic powder

-1 tsp 21 Seasoning Salute from Trader Joe's (if you don't have this or can't find it, use 1/2 tsp celery seed powder instead. If you don't have celery seed powder use 1tsp garlic powder instead of just 1/2tsp garlic powder as stated above and call it a day. I promise, the chicken salad will still be good. Don't worry!)


Combine all ingredients in a large bowl and mix well. Like really well. Even when you think everything is well coated, just keep mixing. Trust me.

Serve on sandwiches or on a bed of lettuce. Or with whatever the hell you want to serve it with.
