Smoked Paprika & Garlic Shrimp + Lime & Cilantro Cauliflower Rice

This is the most delicious and impressive dinner. And also. IT'S EASY. Which is what we care about for 10-minute dinners. One of the best things about this dinner is that it comes together in 10-minutes AND there is only one pan to clean! The cauliflower recipe is inspired by Skinny Taste - one of my faves. Yields 4 servings

Ingredients:

4 tsp olive oil, separated

16 oz riced cauliflower (I used Cece's Veggies)

4 tsp minced garlic (I used jarred minced garlic), separated

4 diced scallions

Juice of two limes, separated into 1.5 and .5 of the limes

1/2 TBS cilantro paste

1.5 lb large shrimp, shelled, deveined

2 tsp smoked paprika

salt + pepper to taste

red pepper flakes for serving


Instructions:

Heat a large pan over medium heat. Add 2 tsp olive oil and once heated add the scallions and 2 tsp garlic and cook until fragrant - about 1 minute.


Raise the heat to medium-high. Add the cauliflower "rice". Toss well, coating the "rice" in the olive oil mixture. Cover and let cook for 6 minutes.


Meanwhile, in a large bowl, toss the shrimp with the smoked paprika, and salt and pepper to taste.


Once cauliflower is tender remove lid and add cilantro paste and juice of 1.5 limes. Stir well and remove the cauliflower from the pan and set aside.


Add 2 tsp olive oil to pan you just removed shrimp from and allow to heat up. Then add 2 tsp garlic and stir into olive oil. Lay shrimp in pan, cooking in two batches if necessary. Cook for 2 minutes on one side and then flip and cook for 1 minute on the other side. Turn off heat and add the remaining lime juice and mix well.


Divide shrimp amongst four plates. Serve with cauliflower rice. Top with red pepper flakes, if you please!
