The Easiest Latkes (Potato Pancakes)
My mom was filled with incredible cooking hacks - and one of my favorite hacks she used was making latkes with frozen hash browns. Grating potatoes is a real pain in the ass. You can of course use a food processor and grate potatoes that way, but it's still time consuming, and you have to clean the food processor. No thanks! These latkes come together quickly - and no one ever guesses that they are made with a frozen ingredient.
Ingredients: 4 cups frozen shredded hash browns 1⁄2 cup finely diced onion 2 tablespoons milk 2 eggs, beaten 1⁄4 cup flour (I used @cup4cuo GF multipurpose flour) 1 teaspoon salt vegetable oil
Instructions: Defrost hash browns in a colander by running cold water over them for a few minutes. Then spread them out on a paper towel and gently pat dry. Put hash browns into a large bowl. Add the onions, eggs, milk, salt and flour. Mix well.
Heat 1/4 inch vegetable oil in a skillet over medium-high heat. Scoop 1/4 cup of hash batter into hot oil. Fry until browned to your liking on both sides. Remove from skillet and drain on paper towels. Serve with sour cream, diced onions, chives, apple sauce or whatever you please!
