Zingy Lemon, Garlic & Anchovy Salad

I'm kind of salad obsessed when it comes to lunch - but I want these puppies to pack some serious flavor. Lemon, garlic and anchovy are an amazing combination that provide the punch I'm looking for. This salad is perfect for lunch, but also plays well to a side or starter salad for any meal.

Serves: 1

double, triple or quadruple if making for a crowd, or if making for lunch for the week. Just keep the dressing separate from the lettuce until ready to serve!


Ingredients:

DRESSING:

Juice of 1/2 lemon

1 anchovy finely minced

1 clove of garlic finely minced

1 tsp dijon mustard

1 tsp mayo

1 tsp olive oil

pinch of course salt

pinch of black pepper



LETTUCE:

3 large handfuls of your favorite lettuce. I used kale.


TOPPINGS:

Sprinkle of red pepper flakes

Crushed cashews

Anything you want (think chicken, avocado, nuts!)

Whisk all dressing ingredients in a large bowl. If you're using kale, makes sure to give it a good massage to break it down. Like, a real good massage. Don't be afraid to go deep-tissue on it. Throw the lettuce you are using on top of the dressing and toss well. Once lettuce is coated with dressing, throw on your toppings and give it another toss.
